Vegetarian Five Bean Chili

Ingredients:

  • 1 tsp olive oil
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 teaspoons minced garlic
  • 2 cups vegetable broth
  • 1 can chunky tomato sauce
  • 1 can black beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 can great black eyed peas, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can of corn, drained and rinsed
  • 2 teaspoons of Beck’s Devil Dust
  • Pinch of salt and pepper to taste

Preparation:

Sautee red peppers, onions and garlic in a large, thick bottomed pot over medium high heat until onions are translucent.

Stir in stock a little at a time and bring to a boil.

Add tomato sauce, beans, corn and Devil Dust.

Reduce heat to a simmer and cook 15-20 minutes longer, stirring throughout.

Serve hot with sliced scallion, cheese, sour cream and cheddar cheese.
